Franchement pas terrible..les takoyaki était gras le ramen bouillon dilué donc super fade la viande grasse et de mauvaise qualité même les nouilles sont pas terrible vraiment déçu..je ne recommanderais plus jamais. |

This certainly didn't feel like a 4.8 star place (its current google rating as of writing this post). I have no problem with the service or staff. However, I think the restaurant's strategy is flawed. You have dishes representing many different regions of Japan and even Chinese dishes, so the cuisine lacks an identity, but, more importantly than that, it requires a lot of ingredients to be kept fresh and, while they had a good amount of takeout/delivery volume while I was there on a Saturday afternoon, it wasn't enough to justify such a large, diverse menu. Case in point: Takoyaki. The takoyaki were lukewarm in the middle, so they were certainly not made fresh. My guess, based on taste and the browning pattern on the outside, is that they were made a day or two beforehand and heated in the oven upon order. The problem with this technique is that the octopus loses freshness very quickly and this style of reheating makes it easy to leave the middle cool when it should be piping hot all the way through. So, the taste, texture, and temperature weren't quite where they needed to be. The ramen also hints at a lack of specialization. The lack of nori was disappointing and the presence of raw red onions was surprising. I don't enjoy this in my ramen as a matter of personal taste and didn't think to ask since it's not a typical ingredient. The tonkatsu broth also lacked the typical umami of a well done broth. It was a good amount of food and the egg was actually done perfectly! But, overall, it's not quite what I was hoping for for a €19 bowl of ramen. I'd highly recommend this restaurant limit its menu to dishes it can serve fresh and do well. I don't know about the reasons why it has chosen to serve such a diverse menu, but I don't think it's possible for a restaurant of their size to serve six different fishes for sushi, ramen, a dozen different appetizers, yakitori, and Chinese dishes. It's just too many ingredients to ask your staff to manage and keep fresh and forces you to take shortcuts on freshness and preparation. This is not a bad restaurant by any means. This is a good restaurant that has forced itself to sometimes serve mediocre meals due to its menu choices. It's actual google rating should be in the low 4s as it currently stands. |
